What I’ve been eating

I am in a bit of a hurry but I realize I haven’t been updating…. I want to stay on track and I love blogging and sharing with everyone about this journey! … I will be commenting and replying soon… hopping around your blogs as well! Just hang in there … I’m coming! LOL! (I am pretty much talking to the 4 people that consistently follow and/or comment on my blog… LOL!) BTW… just real quick… Jackie… you rock! I sometimes don’t even know what to say… but I wish I could just “make it all go away” you are an example of courage and good attitude! How you care for all of us and share what you go through to even try to help others… is admirable! I am sorry you’ve been having rougher days… but if anybody can do this… it’s definitely you! Prayers for you!


And now… here I just want to share real quick some of the things I’ve been eating lately…

  2. I have chills! Isn’t it amazing that you can eat so much and still lose weight? I had a feeling it was all about WHAT you’re eating, and I am so thrilled that it seems to be working! Can’t wait to hear more! (Your first meal and your pancakes look very similar to what I ate today.)

    And I’ve been to Jackie’s blog since I see her so much here, and you are right. She’s quite an inspiration!

    • It is amazing indeed! I would be amazed to be able to eat like this and not gain weight… I find it nothing “short of miraculous” that I can even LOSE it! 🙂

      Thanks Shadow! Those pancakes were made with almond milk, cream cheese and vanilla extract ONLY! WOW!

      • Really? No flour-y stuff at all? Wow is right!
        My pancakes are a little more carb loaded, but full of protein which I need. Mine are made with whole oats, an egg, cottage cheese, 1/2 banana, almond milk, and vanilla extract. Blend it all together and voila! 🙂
        Can’t wait to hear more about how you’re doing!

      • I will be making more “higher carb” pancakes soon… but when I saw this recipe for an “S” meal (low in carbs) I just knew I HAD TO TRY IT… And it works! I will be adding almond flour, golden flax meal and oats soon to make it my own 😉
